I usually just get Maasdamer or Emmental cheese for sandwiches. Parmesan on pasta. Feta for Greek salad; can be used in other instances. Mozzarella paired with tomatoes.
I can appreciate Brie in moderate quantities.
Do not like cottage cheese or ricotta (but haven't had it in a long time).

i have just come from eating some emmental with crackers. it is tasty, but too firm to be a cracker cheese. i love brie on crackers, but i will never eat the crust. i used to think parmesan was bad because i only knew the ""pre-grated"" ""parmesan"" that comes in a shaker. fresh-grated parmesan is quite good. gouda is my preferred sandwich cheese. colby is the best american cheese. i love to grate a huge heap of it like Kip in Napoleon Dynamite. monterey jack is worthless. colby jack is just colby with some dumb filler.

I love Cheddar, Gouda, and Colby Jack, like Parmesan on pasta, and appreciate Mozzarella and Brie. Swiss is eh, and I don't like Pepper Jack, bleu cheese, or cottage cheese.

I've heard Americans also have something called "Cheese in a can" (like an aerosol can), and I don't think I ever wanna try that.

despite my recent thread about cheesegrating songs, i actually STOPPED grating cheese around the same time. i found that i don't get enough of the flavor of the parmigiano. now i alternate mouthfuls of pasta with a nibble straight from the block. #winning
