I want to try more new hobbies (as if I don't already have enough)
I recently tried bouldering (I would go again) and bought some wool and a crochet hook (My best friend is really into crocheting and encouraged me too).
What are some other new hobbies I can invest the free time I don't really have into?

Learn an instrument? Guitar is fairly easy to get a start in. If you take a couple of lessons - maybe once a week for at least two months - that should give you a good basis in a condensed amount of time to continue on your own from there. Piano/keyboard a bit harder, but also manageable (as opposed to, f.ex., trumpet). I once had five months of piano lessons, but haven't gotten too far on my own since then. Drums are fun, too, but not a great side-hobby, since you won't get too far without your own drum kit (firstly expensive, secondly noise/neighbors issue). Bass would be a great rhythm instrument alternative. A much cheaper, accessible instrument would be the harmonica.
Many people approach learning an instrument with the goal to dazzle other people, but I can't recommend it enough as also just a therapeutic experience in your everyday life. This becomes possible once you get the hang of it, i.e. go through occasional dull practice routines to get the finger memory ingrained. Consistency is more important than taking a lot of time for practice in a single day... 20-30min a day can be enough; easy to squeeze into anyone's schedule. It's a hobby that also becomes a great socializing tool if you meet other music-playing people (kick out the jams).

yeah playing music is fun as fuq, with other people especially, but also just improvising and playing around for your own entertainment is an instant invigorator. . and you can get a greater appreciation of your favorite artists by learning their songs.

Yeah, guitar's fun and pretty easy, I'm pretty much self-taught. Piano is a bit harder but not too much. I predominantly play violin, which is fun but one of the hardest instruments (I've been playing for years and am still nowhere near the level I aspire to be at).
