Look at the stats Dumbledore from transfiguration to headmaster. McGonagal transfiguration teacher and deputy headmisstress. Its a well-respected and cool job

DADA - you'd become a legend no matter HOW you taught. All the teachers have been like that. Plus, it's the most interpretive class to teach - you can do whatever you like with it. It'd be fun to be all creative with teaching methods.

I'd be Transfiguration or Charms teacher. Those always seem to be the most interesting or useful. They are also well-respected and require a lot of skill.
