What does the extended version have on it that is different to the regular? Take-outs (both funny and stuff that got cut because the film was too long)? Some kind of "The Making of" section?

The extended version has all these bits of scenes and completley new scenes thrown in, and remastered. Although I seriously doubt that two and a half hours of material will be added on. The last two gained around half an hour.
There are two "The Making" discs, fore each Extended version are four discs long (at least for FOTR and TTT they are).
I already have ROTK, but plan on getting the EE anyway.

For big fans of the movies (and the books) the Extended Editions are a must. You just get the whole story, and the behind the scenes features are really interesting and in-depth, not just all the recycled stuff you get off of the regular editions. but for people that already think the movies are too long, and don't care how they made them, then I wouldn't recommend the EE. I can't wait until ROTK:EE! We never buy the regular editions (but we do rent them befor the EEs come out).

Personally, I'm waiting until the box set of all 3 extended editions comes out. I've rented the EEs of the first two, and they're awesome. They give you so much more insight into the characters... in TTT, for example, you find out why Faramir wants the ring (even if it was completely different from the book, at least they gave a reason for it in the movie, and it rather sets up for the Faramir-Denethor conflict in ROTK).
I know that in ROTK:EE, we'll have more of the Houses of Healing (when Eowyn meets Faramir, if I recall correctly), and the death or Saruman. No scouring of the Shire, though, because Peter Jackson never intended that to be in the movie at all.
