actually it is set for release in june 2007, not x-mas 2006. from 3+ they are doing June one year november the next skip a year and start over. so here is how it will go(and has gone)
SS-november 2001
CoS-november 2002
none in 2003
PoA-june 2004
GoF-november 2005
none in 2006
OotP-June 2007
HBP-november 2008
none in 2009
Book 7-2010

as the movies get more complex and more CGI is needed it takes longer, so 17-19 months is requiered in between each film. And to release at a good time.
