I have a feeling that by around the end of December we'll have some idea as to the season's release date. We'll likely either have a trailer (teaser or otherwise) and or some other kind of marketing push, perhaps akin to the pictures on the official IG account circa December 2017.

Not sure if this has been talked about before, but, does anyone else think Netflix might add a ‘secret’ / unexpected short episode for chapter 14? Or maybe keep it as an end of credits scene? I think it could be a nice nod to the books

A few of us have definitely been wondering if they'll format it like that. They've been quite clear about the series being seven episodes long, but any such epilogue would be too short for them to want to include it in the formal count; and I suspect they'd actually glue it right onto the end of The End rather than issuing it separately, too (much like the original Chapter Fourteen).

They've been quite clear about the series being seven episodes long This has always confused me, because every other book gets two episodes. But there are four books left, and some basic multiplication tells me there should be eight episodes. Is the last episode just going to be one long episode?

And it has also been confirmed to an adaptation of both the Beatrice Letters and The End.

I was sat in a hospital today and thought about Mr. Poe's character development. Because he's got a larger role in the TV show, and he's seemingly off on an adventure with Kit Snicket, the audience is going to expect some kind of changes in him. I doubt he's going to be redundant this time, blundering about with Kit and blundering about the hotel, then just leaving like he has in previous episodes. I have a feeling he may do some learning in series three if he doesn't have a significant contribution to the plot (probably a sub-plot) in another way.
